About Our Malai Kofta

Kofta means dumpling, and malai points at the richness around it. Ours are built from home-made cottage cheese bound just enough to hold, then stuffed with raisins and chopped nuts so every bite carries a little sweetness against the savoury gravy.

The sauce is a tomato and onion base, cooked down slowly with ginger, garlic and warm spice until it turns glossy and mellow. It is one of the gentlest dishes on our menu — rich rather than hot — which makes it the vegetarian main we most often recommend to guests eating Indian food for the first time.
