About Our Gulab Jamun

The name comes from gulab, meaning rose, for the scented syrup, and jamun for the dark plum the dumplings resemble once they are fried. It is the most widely loved sweet in North India and turns up at every wedding, festival and family dinner.

Getting it right is a matter of texture. The dough has to be handled lightly and fried slowly at a low temperature so the centre cooks through before the outside darkens. Rushed, they come out raw in the middle; done properly, they are spongy right to the core and give way under a spoon.

The soak is what finishes the dish. Straight out of the fryer the dumplings go into warm syrup and stay there, drawing it in until they roughly double in weight. Served warm they are soft and the syrup runs; cold from the fridge they firm up. We recommend warm.
